Key West Kayak Cooking - Salt Encrusted Snapper - Catch and Cook.
Traveled a long ways in search of a 13" Mangrove Snapper. With a lot of wind, nearshore waters have been very dirty and has really slowed down the bite. I decided to make a run to the back country to guarantee a nice eater Snapper. Fortunately, after switching back to my old stand by of live Pinfish for bait, I was able to catch a nice 13 and 15" Snapper. With success that meant I was able to make this video. Today, I decided to do another different type of cooking method which was salt encrusting. This can be used on a variety of meats, but works really well with fish as it prevents any burning or drying out. The meat comes out especially moist. After cleaning the fish (leaving skin and scales), you can prepare the salt crust. Mix rough salt (kosher) with either water or egg whites. You want them to be the consistency of snow but not wet. Just enough to be able to hold form. Create a base and set the fish on top. Cover the fish with the remaining salt. The entire body of the fish must be totally covered. Set it in the oven at 350-400 degrees or on the barbecue at low-medium heat. Let cook for 45 minutes varying depending on size. When done, crack open the shell and sweep the salt away from the fish. Carefully peel away the skin leaving the meat untouched by salt. You can stuff the fish prior to covering in salt, but I prefer to season after I have removed the meat. Bon appetit.
